The Porcelain Trio
Most garlic found in grocery stores is softneck garlic, selected in part for its long storage life and ability to withstand shipping. Porcelain hardneck garlic offers an entirely different experience.
Each bulb forms a small number of exceptionally large cloves around a central stalk. The cloves are generous, easy to peel, and full of character. Their flavor does not simply announce itself through heat. It unfolds—sometimes bright and lively, sometimes warm and savory, and sometimes deeply sweet and almost nutty after roasting.
The Porcelain Trio brings together the three cultivars we chose to grow: Music, Susan Delafield, and Zemo. Each has its own history and its own expression, yet all three share the qualities that first drew us to porcelain garlic: substantial cloves, beautiful structure, and bold, complex flavor that remains present in a finished dish.
A Tasting of Place
Grown side by side through the same Whidbey Island season, these three cultivars offer an opportunity to experience how differently garlic can express itself.
Taste them raw and their individual brightness, heat, and aroma emerge. Sauté or roast them and each moves toward sweetness and depth in its own way. Rather than overpowering a dish, they become part of its foundation—bringing richness, warmth, and an unmistakable sense of the earth in which they were grown.
For us, that is what makes an ingredient worth caring about. Food carries the landscape into the kitchen and becomes part of the dishes around which we gather, celebrate, and share our lives.
