Scapes

Garlic scapes can be used in so many ways, in fact we use them in place of garlic cloves in any recipe at all. Here’s a great way to make a delicious pesto.

• Wash and coarsely chop a bunch of scapes and a good handful or two of walnuts.
• Grate an equal amount of Parmigiano-Reggiano and add it to the scapes and nuts.
• Process with a little salt and the zest of a lemon until the mixture is finely chopped, then drizzle in olive oil to cream it, very nice.
